Savorful Saturday: Creamy Apple-Horseradish Soup

“A Tastebud Sensation” by Star Clippers Cruise Line takes 2 unlikely ingredients to make a unique soup!

Makes 3 Cups

INGREDIENTS:
Soup
1 Granny Smith or other green, tart apple
25-30 cherry tomatoes
4 teaspoons prepared horseradish
1 clove garlic
2 tablespoons apple cider vinegar
3 tablespoons olive oil (extra virgin preferred)
Juice from 1/2 Lime
1/2 teaspoon sea salt (add more if needed)

Topping
2 tablespoons crème fraiche
1 teaspoon prepared horseradish
2 teaspoons fresh dill
Lime juice from wedges to taste

DIRECTIONS:
Peel, core, slice, and chop apple
Cut cherry tomatoes in half
Place tomatoes and chopped apple into food processor. Add remaining soup ingredients, pulse until well combined. Add more salt if needed; pulse again
Strain mixture into a quart glass bowl. Press solid pieces until dry–try to get 3 cups of liquid; discard remaining solids
Cover strained mixture and chill for three hours minimum; overnight will allow flavors to blend even more
Before serving, make the horseradish-dill-crème fraiche by combining ingredients and stirring until smooth
Remove soup from refrigerator and stir; adjust seasonings if needed
Serve soup in small bowls and top with the horseradish/crème fraiche mixture
