A Mashed Potato Dish to Remember

Garlic, Bacon & Stilton Mashed Potatoes

  • 6 garlic cloves, peeled
  • 1 teaspoon olive oil
  • 2-1/2 pounds small red potatoes, cleaned
  • 4 ounces cream cheese, softened
  • 1/2 cup butter, cubed
  • 1/2 cup 2% milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 pound Stilton cheese, crumbled
  • 6 bacon strips, cooked and crumbled
  • 3 tablespoons minced fresh parsley, divided

  1. Preheat oven to 425°
  2. Place garlic in heavy-duty tin foil, double thickness and drizzle with oil
  3. Wrap foil around garlic; back for 15-20 minutes until softened; cool for 10 minutes
  4. Peel and slice potatoes; put in a large saucepan and cover with water; bring to a boil
  5. Reduce heat; cover and cook for 15-20 minutes or until tender; drain and transfer to a large bowl
  6. Squeeze softened garlic into potatoes; add cream cheese, butter, milk, salt and pepper; mash until desires consistency and all ingredients are combined
  7. Stir in the Stilton cheese, bacon and 2 tablespoons parsley
  8. Before serving, sprinkle with remaining parsley and additional crumbled blue cheese and bacon if desired
  9. Enjoy!
