Spicy Italian Stuffed Peppers

You get everything with these peppers, the sweetness from the bell pepper itself, that savory vibe from the meat, & a nice dose of spice to go with them both! It’s like spicy Italian meatball meets a bunch of veggies and cheese – Cheese – my favorite! Stuffed peppers are a simple meal that anyone who doesn’t hate peppers will love!

YIELD: 4 servings

INGREDIENTS:

4 bell peppers, sliced in half lengthwise, seeds removed
3 Tbsp olive oil
1 tsp salt
1 tsp freshly cracked black pepper
1/2 tsp garlic powder
1/2 yellow onion, chopped
1 bell pepper, diced
1 clove garlic, diced
1 large tomato, diced
1 lb. lean ground beef
1 1/2 tsp Italian seasoning
1 tsp red pepper flakes
1 1/4 cups marinara sauce
1 cup shredded mozzarella cheese
2 tsp freshly chopped basil

DIRECTIONS:

1. Preheat oven to 400˚F
2. Brush pepper halves with 2 Tbsp olive oil; sprinkle with 1/2 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder
3. Place peppers on a baking sheet; roast for 15 to 20 minutes
4. In a large skillet over medium high heat, heat 1 Tbsp oil; add onion and pepper, cook until softened (about 5 minutes) stirring occasionally
5. Stir in garlic; cook for 30 seconds to 1 minute until fragrant; stir in tomatoes, and cook for 3 minutes, stirring occasionally
6. Stir in beef (breaking apart with a wooden spoon) until browned
(about 5 minutes)
7. Stir in Italian seasoning and red pepper flakes
8. Add marinara sauce; stir to combine; cook for another 5 to 6 minutes
9. Remove peppers from oven and place in a large casserole dish
10. Fill each pepper half with the beef mixture, filling to the top
11. Cover the peppers evenly with cheese and bake for another 15 minutes
12. Garnish with freshly chopped basil and serve immediately
13. Enjoy!
