Holiday Time Red Mint Homemade Marshmallows with Hot Cocoa Recipe

Courtesy of our friends at Disney Parks Blog, enjoy this refreshing hot beverage recipe! From Festival of Holidays at Disney California Adventure Park, this recipe is sure to warm you up!

Ingredients:

  • 3/4 oz unflavored gelatin
  • 1 Cup Water, divided equally
  • 2 Cups Granulated Sugar
  • 1/2 Cup Light Corn Syrup
  • Pinch of Salt
  • 1/2 Tbsp Peppermint Extract
  • 1/2 Cup Cornstarch
  • 1/2 Cup Powdered Sugar

Directions:

  1. Spray 9×13 pan with non-stick spray
  2. Mix gelatin with 1/2 Cup Water in bowl with an electric mixer, then set aside.
  3. In medium saucepan, mix remaining 1/2 Cup Water, Sugar, & Corn Syrup
  4. Cook over medium heat for 12-15 minutes, until mixture reaches 240 degrees Fahrenheit. Remove from heat & rest 1 minute, until temperature reaches 230 Degrees Fahrenheit
  5. Pour sugar mixture into gelatin & water.
  6. Whip on medium speed for 2 minutes, or until mixture begins to thicken. Add salt, then continue to whip for 8-10 minutes, until mixture doubles in size.
  7. Add Peppermint Extract and gel food coloring. Whip 1 minute.
  8. Spray a spatula with non-stick cooking spray, then pour marshmallow mixture into prepared 9×13 inch pan. Smooth with spatula. Marshmallows will be very sticky.
  9. Let marshmallows rest for 4 hours until set.
  10. In small bowl, combine cornstarch & powdered sugar.
  11. Once marshmallows are set, cut into 24 squares. Dredge in corn starch & powdered sugar mixture.
  12. Store in airtight container until ready to use.
  13. When ready to use, add to hot cocoa & enjoy!
