A Summertime Salad

4 large aromatic vine-ripened tomatoes, thinly sliced
Two 4-oz. Buffalo Mozzarella balls, thinly sliced
1 mango (peel, cut into chunks)
Fresh basil leaves
3 or 4 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar (to taste)
Sea salt (to taste)
Freshly ground black pepper (to taste)

Arrange the tomato and buffalo mozzarella on a large serving dish, alternating and overlapping them
Drizzle with olive oil and balsamic vinegar
Season with salt & pepper
Top with the sliced mango
Then top with basil leaves
