A Little Taste of Costa Rica

Sopa Negra, also called Costa Rican Black Bean Soup, is a delicious soup! Check out this great recipe courtesy of Star Clippers Cruise Line!

DIRECTIONS:
1. Wash beans and place in a large stockpot.
2. Cover with water and bring to a boil.
3. Boil for 3 minutes; turn off heat; allow to sit for one hour.
4. Sauté in canola oil: onion, celery, carrot, peppers; once softened, add the garlic.
5. Drain and rinse beans; return to the pot.
6. Add broth, sautéed vegetables and ginger, salt, pepper, and cilantro.
7. Bring to a boil; turn the heat down, partially cover and simmer until beans are tender (2-3 hours).
8. Garnish with a spoon/dollop of sour cream, a slice of avocado, chopped green onions, sliced radishes, and chopped hard cooked egg.
9. Serve with warm corn tortillas.

VARIATION: To add some heat, add a dollop of spicy salsa or chopped jalapeno and red pepper flakes.
