Filet Mignon with Truffled Mushroom Sauce

DIRECTIONS:

1. Slice the beef tenderloin/fillet into medallions
2. Drizzle each steak with olive oil and season well with salt, pepper and fresh thyme
3. Heat a large, deep pan over high heat; add the medallions.
4. Cook fillets to your preference (medium rare is 4-5 minutes each side)
5. Remove from pan and place on a plate to rest

6. Using the same pan you cooked the meat, add olive oil, then mushrooms, garlic and thyme
7. Cook until mushrooms are golden brown; pour in the cream, lemon juice and truffle oil; season with salt and pepper
8. Simmer until sauce coats the back of a spoon (a few minutes)

9. Put steaks back into pan with any resting juices
10. Cook for another 2-3 minutes to warm the steaks through then serve!
